Who invented mayonnaise?

Mayonnaise, the rich concoction of emulsified oil, egg yolk and either vinegar or lemon juice, is said to be invented by the French chef of the Duke de Richelieu. The chef prepared a feast in celebration of Duke Armand de Vignerot du Plessis's victory over the British at Menorca's (Spain) port Mahón in 1756.  One of the sauces he prepared needs cream and eggs but since there was no cream in the kitchen, he improvised and used olive oil instead and voila, a new culinary masterpiece was born. The sauce was originally known as "salsa mahonesa" in Spanish and "maonesa" in Catalan (as it is still known in Menorca), later becoming mayonnaise as it was popularized by the French.
